Blog Jam Copic Give-away
October 21st, 2008
Several weeks ago, Sharon mentioned that she was going to make her fabulous Pineapple Jam. I got to thinking about the raspberries that were wasting away on the vines and the peppers still in my garden. So that afternoon, I went out and picked my berries and peppers for Raspberry Pepper Jam and made it that night. Here is the recipe that I used, and I just added 6 diced jalapeno peppers (seeds removed) to the cooking mixture. Now most folks would like this jam over a brick of cream cheese, and I’ll admit, that’s pretty good. But here’s my very favorite thing to do with Raspberry Jam (homemade or store-bought, with or without the peppers):
I don’t know what you want to call this cracker spread, and I admit it doesn’t sound very appetizing but we call it G*O*O*D. It’s my favorite thing to take to a social event when I’m ‘in a jam‘ and need something quick. Generally, I have everything on hand, and it is so very tasty.
Cracker Spread
- 1 cup grated sharp cheddar cheese
- 4 green onions sliced
- 2 Tbls. Hellman’s Mayo (I would never recommend Miracle Whip ;), but especially not in this recipe. The sharp cheddar just begs to be paired with the distinct Hellman’s flavor.)
- 4 Tbls. Raspberry Jam
Mix cheddar cheese, green onions and mayo in a bowl and stir. Spread onto serving dish. Cover with layer of raspberry jam, being careful not to mix the 2 layers. I usually take the jam with me and add it just before serving. Serve with your favorite cracker.
Something about this mixture of sweet & salty & sharp cheddar. It is *so* good.
I found this stretchy ribbon at Archiver’s a few weeks ago. It was easy to single knot and secure with a pin. The lid topper was stamped with Flora Backgrounder from CHF, in Lady Bug Red Momento ink from Tsukineko. Then, I squished the lid topper into my new VersaMark Dazzle pad - coating the floral image with Champagne flavor, I mean, sparkle. The coating of the VersaMark gives the stamped topper a little gold flecked sparkle and a shiny coating. It reminds me of a piece of old oil cloth that my grandma might have used for a table covering. Love the ingenuity of Tsukineko to add shimmer and frost to their essential VersaMark pad. You can purchase these new pads from Ellen Hutson. Thanks, Tsukineko!
Well, my post is getting long, but I’m sure you don’t want me to end it without telling you how to enter for my Copic Marker give away. It’s simple. Leave me a comment (one per person) between now and Thursday night at 10:00 p.m. central, and I’ll draw for a winner. Just like Sharon, I’ll post my Copic Marker give-away winner on Friday morning at 8:30 a.m. central.
Thanks for stopping by! I’ll see you tomorrow!

The jam sounds tasty but I have to admit I never would have thought to pair it with those ingredients for a cracker spread. I might have to give that a shot someday - with store-bought jam, of course. I’m not much of a jam/jelly maker.
October 21st, 2008 at 7:19 pm
Thanks for sharing your recipe. I’m going to have to wait till next year to make it since raspberry season is over here in Ontario. Thanks for the chance to win the copic goodies.

October 21st, 2008 at 7:39 pm

Can’t wait to use your recipe at our family’s next get together. We have a tradition of watching Buckeye football together each Saturday of the season, so I’ll have an opportunity this week. I’ve never tried Copics but my stamping buddy, Crystal, and I are getting mighty itchy to give them a chance. I go to the art supply store and tell myself & my daughter, “Don’t look to the left or the right. We’re here for *specific product* only.”
October 22nd, 2008 at 8:05 am

October 22nd, 2008 at 9:22 am
The jam and spread look good. I copied the recipe to try. We made elderberry jam this year. It is so good. You have to keep your eyes out during the Summer to see where the elderberry bushs are blooming (in the ditches) so you know where to go back in the Fall to find the berries. They are tiny and a lot of work to clean…but make the most delicious jam. It is like having a taste of Summer in the Winter.
October 22nd, 2008 at 9:25 am
delish!!! I will have to try your recipe, as we are huge fans of pepper jellies here!
another tip for the jalapenos (or whichever pepper you choose) - wear gloves when working with hot peppers!!! especially if you have contact lenses. ask me how I know that those oils don’t come off of the fingers with regular hand washing!
October 22nd, 2008 at 9:57 am
wow…your jam looks delicious!! i have never tried copics so this would be a perfect candy for me to win! thank you for the opportunity!

What a great idea! If I ever garden someday, I’ll be a canner like my granny!
That’s definitely an interesting recipe. Maybe someday I’ll be brave enough to try it. LOL
October 22nd, 2008 at 10:15 am
Lori Lori Lori….that is one enticing looking jar and plate of yumminess
When you said you added peppers to the jam I was thinking, really???…but paired with cheese and crackers…yep I can totally see it!
Have a great day girl!
October 22nd, 2008 at 10:30 am
What a wonderful idea for gifting! It’s so beautifully decorated, too.
I’d love to win the Copics, I’ve been dying to try them! Thanks for the chance.
October 22nd, 2008 at 10:40 am
Is your Jam spicy or hot? I’ve never had it with peppers added. It did look yummy, though. Would love to have the copic markers….but who wouldn’t.
October 22nd, 2008 at 10:44 am

October 22nd, 2008 at 11:44 am
Your jam and spread sound really good!! So do the copic markers. I don’t have many and would love the chance to win some. Thank you.
October 22nd, 2008 at 11:52 am
Gosh. That recipe sounds delish! I love savory and sweet together. I’ll have to give it a try, though without the homemade jam. I envy you your raspberry bushes.
Copic markers are a lot less calorie-laden than jam and dips, so would be much better for me!
October 22nd, 2008 at 11:56 am
Oh Man!!! I don’t have those colors yet either!!! Wouldn’t that be perfect! I have to say…I’ve never been one to understand blending peppers with jam. I know a lot of people that LOVE it though. Maybe I just need to try it, and them MAYBE I’ll like it! My mom always used to make fresh strawberry freezer jam! It was so good you could just eat it with a spoon! Thanks Lori!
October 22nd, 2008 at 11:57 am
WOW. You have a lot of comments. I’d love to have a few more Copics. I started buying them one at a time at HOBBY LOBBY with a coupon… I know pathetic. Then we moved and I am not near a HL. So sad.
I’d like that jam though too! Looks YUMMY!
October 22nd, 2008 at 12:34 pm

October 22nd, 2008 at 7:37 pm
Hi Lori,
It was so much fun spending some time with you in Kansas City! Wish we’d have had lots more time
Your jam sounds out of this world! I love pepper jellys and use them frequently to baste a pork roast with - or add into a homemade salad dressing (pepper jelly, sesame seed oil, rice vinegar and a dash of sugar or honey - and whisk ‘em all together). Right now, as the weather turns cooler, I’m thinking of spreading your Raspberry Pepper jam on a sliced turkey sandwich - leftover from Thanksgiving. Yummmmmm-o!
October 22nd, 2008 at 7:40 pm
PS - Thanks for using the Lady Bug Memento (great color, eh?) .. and topping it with the VersaMark Dazzle. You’re such a clever lady!!
VersaMark Dazzle is hard to photograph - but leaves a nice little slice of elegance to paper crafting projects. I can’t decide which I like better, the Frost (like VersaMark Snow!) or Champagne (with a little bit of sparkle!). They’re both PERFECT for making snowflakes, snowmen, and adding some sheer elegance for the holidays. Thanks again! Susan
